Golden Turmeric Quinoa
1 cup uncooked quinoa, rinsed
1 13.5 oz can unsweetened coconut milk, well shaken
2-3 tbsp fresh turmeric, peeled and grated
1/2 tsp light brown sugar (optional)
1/4 tsp ground cinnamon
pinch ground cardamom
1/3 cup golden raisins
1/2 tsp dried pepper, crushed (substitute red pepper flakes)
1/3 cup salted pistachios, coarsely chopped
kosher salt to taste
Place quinoa in a small-mesh strainer and rinse under cold water until water runs clear.
In a large pot, combine coconut milk, turmeric, salt, sugar, cinnamon and cardamom. Bring to a gentle boil, stirring frequently. Remove pot from heat, add raisins and allow to steep 20-30 minutes.
Add quinoa and pepper to pot on med-high heat, and return pot to a low boil. Reduce heat to low and cook until liquid is absorbed and quinoa releases its spirals - 15 minutes.
Remove from heat and let stand for 8-10 minutes. Fluff with a fork then serve topped with pistachios.
