Keto Sausage Alfredo

1 lb hot Italian sausage
1-2 cups sliced mushrooms
1-2 tsp fresh rosemary, chopped
1-2 tsp fresh oregano, chopped
2 tbsp ghee or butter
3-4 cloves garlic, minced
1 cup heavy whipping cream
1/2 cup freshly grated Parmesan
Salt and pepper to taste
2 medium zucchini, spiralized

In a large skillet, brown sausage in melted ghee for 2-3 minutes on medium-high heat. Add mushrooms, garlic, rosemary and oregano and continue to cook stirring frequently until sausage is cooked through.

Add Parmesan cheese and stir to incorporate. Slowly add heavy whipping cream, reduce heat to medium-low and stir constantly to prevent scorching. Cook until sauce thickens, 3-4 minutes.

Microwave zucchini 2 minutes, separate into 2-3 servings and top with sausage alfredo and garnish with extra Parmesan cheese.
