Keto Meatballs
i lb, ground beef, port or turkey
2 tbsp fresh parsley, chopped
1/3 cup grated Parmesan cheese
1/4 cup almond flour
1 large egg, beaten
1 tsp sea salt
1/4 tsp freshly ground black pepper
1/4 tsp garlic powder
1/4 tsp onion powder
1 tsp fresh oregano, chopped or 1/4 tsp dried oregano
1/4 cup warm water
double recipe of tomato sauce or marinara sauce of your choice
Preheat over to 350 degrees and line rimmed baking sheet with parchment paper.
Combine ground beef, parsley, cheese, almond flour, egg, salt, pepper, garlic and onion powder, oregano and water. Mix thoroughly by hand or using the dough hook on a stand mixer until ingredients are well incorporated.
Roll mixture into 12-16 meatballs 1 1/2 - 2 inches in diameter and place on baking sheet evenly spaced. Bake 20-25 minutes. At this point, you can cool and then freeze a portion of the meatballs for later use.
Place the meatballs in one or more oven-proof dishes, top with tomato sauce and sprinkle with extra cheese. Bake another 20 minutes.
Serve over spirilized zucchini.
