Keto Almond Butter Cream Cheese Fat Bombs
1/3 cup organic, creamy almond butter
1/4 cup virgin unrefined coconut oil, melted
2 ozs full fat cream cheese, softened
1 tbsp chopped nuts
1 tbsp cacao nibs (optional)
1/4 tsp pure vanilla extract
1/4 cup finely shredded unsweetened coconut
Stir cream cheese and almond butter into melted coconut oil. Stir until almond better is well incorporated. Small chunks of cream cheese are ok.
Add chopped nuts, cacao nibs and vanilla and stir until blended. Mixture will be runny. Place in the refrigerator for 40 minutes.
Remove from refrigerator, divide into 12 portions, shape into balls and roll in coconut. Each ball will have 11 g fat, 2 g carbs and 2 g protein each. I often add 2 scoops of unflavored collagen protein powder to increase the protein to 3.5 g per ball. It adds no carbs or fat.
